These aren't meant for distribution but rather to debug release-mode code, similar to the previously defined release-with-debug-info MSVC targets
Without being explicit about `CMAKE_OSX_ARCHITECTURES`, it will default to the host architecture for some build artifacts.

Adds some CMake presets to sustain a dev environment on Linux and MacOS again.
