Fix path of license text in Mac installer project

The path was an absolute one. It is now a relative
one, so moving the project or checking it out on
another computer shouldn't break it anymore.

Add release_checklist.txt

Documents the process used to create releases of
the code and installers.

Bump version number to 02.05.00
