Better update the workflow, which dependabot should also send PRs to update
To benefit from its updates automatically, reproducibility isn't that of an issue here

This removes the lines hard-coding the
cscommand line version on CI. This was preventing us from using the version supplied bycoursier/setup-action, which should be more up-to-date.This also cleans up a few things in the GitHub action workflows.
