The decision made while working on #1549 was that it is fine to refer to h1 / h2 internals from httpclient, one of the reasons being that allowing that reducing number of memory allocations.
However, the decision is starting to bite us as we start working on QUIC (#1846).
Hence this PR. It keeps the minimum portion of protocol-specific definitions in httpclient.h, at the same time cramming each protocol implementation into one source file each.
