Haven't had a chance to review this because I'm not so familiar with slog yet. We have the plumbing for it zlog, right? Found this PR quay/zlog#8

Yeah, the plan is to move to using slog throughout the code, which will allow applications to use whatever logging framework they wish instead of needing to set up zerolog to get logs from claircore

This provides for common helpers to use throughout Clair and Claircore
modules.
