test: add integration tests for --set overrides with template customOptions #268

Problem

--set key=value overlays template customOptions, but coverage of invalid keys, type coercion, and multiple --set flags is thin.

Solution

Add integration tests using the offline fixture catalog (fixtures/ / --fixture if available). Cover happy path + unknown key error.
