Add mode to prometheus labels #3288

Description

@aminvakil

Your Feature Request

We monitor haproxy_server_total_time_average_seconds and see if it takes more than a specific time and get an alert for it, it's working fine in http mode in our scenario, but where we are using tcp mode, it's a false alarm as connection gets established and remains established for a long time.

What are you trying to do?

I want to help sending a patch, adding mode label to prometheus metrics (wherever applicable), so we can get alerts based on http mode or tcp mode.

Also there would be more use cases which this feature can help.

Output of haproxy -vv
