PocketBase is mostly for an audience of self hosters and offers such a great set of features to get off the ground quickly. For me as a self hoster, data privacy & security is of great importance and I do like to have the security of relying on a big cloud provider for something like backups, but I don't want to send them the unencrypted data. A simple fix for that would be, that AWS S3 automated backups could be encrypted with the PB_ENCRYPTION_KEY as a configuration option on the backup page.
