Clinical Assignment

Often, we as nurses and other health care professionals involved in direct care inform
our patients of what they should eat to allow for a healthy, well- balanced diet. Yet many
of our older adults often face financial constraints that limit healthful choices. Using this
list, derive at least 1day’s worth of menu planning, complete with recipes that an older
adult can use to achieve optimal nutritional benefit. Upon completion of the meal plan,
answer the following questions:

One Day Menu Plan for Older Adult


Meal Food
Breakfast  1/2 whole wheat bread
 2 tablespoons creamy peanut butter
 1 medium banana
 Coffee
 1/4 cup milk
 2 teaspoons sugar
Lunch  Tuna salad sandwich
 2 slices whole wheat bread
 2 ounces canned tuna
 2 teaspoons mayonnaise
 2 tablespoons chopped celery
 1 medium leaf lettuce
 4 baby carrots or potatoes
 1/4 cup raisins
 1 cup low-fat milk
Dinner  Garden salad
 1 cup mixed greens
 3 slices cucumber
 1/2 boiled egg
 1/4 cup garbanzo beans (low sodium)
 3 pieces of tomatoes
 4 tablespoons mayonnaise
 1 cup tap water
Snacks  1/2 medium apple
 Fat-free strawberry yogurt (8 ounces)
1. Were you surprised at your findings?
I surprised that healthy diet plan for older adult with inexpensive ingredients is
possible, this meal plan is smart food choice that can easily prepare because the
ingredients is can easily found in your outdoor gardens and markets.
2. How will you change your teaching and learning sessions related to nutrition based
on this experience?
Teach them that incorporating more inexpensive yet healthy foods into your daily
routine will help you save money and eat well, that they can use ingredients that can
easily found in their outdoor gardens.
3. How difficult was it to utilize only the ingredients provided to derive 1day worth of
healthful recipes?
For me it’s okay because all the ingredients used are healthy and most important
is this menu provide 2,000 calories a day and not exceed the recommended amount of
sodium or calories from saturated fats and added sugars.
