3. Salivary amylase is present in the mouth and its isoenzyme is present in the intestine, however,
it is not present in the stomach. Why? (10 pts)

The stomach produces its own amylase, which is called gastric amylase. Only the amylase produced by the
stomach, among the amylases produced by the saliva and pancreas, is active in the stomach. Gastric
amalyse is special that it can function in an acidic environment without itself being deformed.
Furthermore, the pH in the stomach is around 1.0 to 2.0, which is extremely acidic. This level of acidity
causes the salivary amylase's protein structure to denature and change shape. With that, salivary amylase
is inactivated by an acid pH, no significant hydrolysis of carbohydrates would then occur in the stomach.
Consequently, salivary amylase does not function once it enters the stomach (West, n.d.).
