Sieve Analysis

This document describes an experiment to determine the average particle size of pulse flour using sieve analysis. The flour is passed through a series of sieves with decreasing pore sizes. The amount of flour retained on each sieve is weighed and used to calculate the fineness modulus. The fineness modulus and a standard formula are then used to calculate the average particle size of the flour, which in this example was found to be 0.905 mm. Proper precautions include using flour from the same variety of pulse, calibrating sieves and scales, and ensuring dry flour.

INTRODUCTION

Particle size represents degree of fineness which may have resulted from operations involving size reduction. The particle size is related to the specific surface area of the product. Manufacture of different food products from flour requires different particle size and fineness of the flour. Objectives After studying and performing this experiment you should be able to: find the average size of pulses flour by sieve analysis

EXPERIMENT
Principle

The most common method of estimation of particle size of pulse flour is to pass the flour through a set of sieves which determines the fineness modulus. The average particle size D in inches is given by formula D = 0.0041 (2) FM 7.2.2 Requirements Sieve set of size 4,8,14,28,48,100, and a pan Ro-Tap sieve shaker Weighing machine (0-1000 g) 23

7.2.3 1. 2. 3. 4. 5. 6.

Procedure Arrange sieve from top to bottom in decreasing order of opening and pan at the bottom. Take 500 g of dry flour and place it in the top sieve & close the lid. Place the sieve shaker in Ro-Tap sieve shaker and set time for 30 min. Take out sieve set from Ro-Tap machine. Weigh the material retained on each sieve and pan and find their percentage. Note observation in following observation table (The table has been filled with required data as an example).
