HOMEMADE HAM

For every Kilo of Pork Meat

1tbsp. Fine Salt


2tbsps. White Sugar
½ tsp. Curing Salt
¼ tsp. cracked black Pepper
¼ tbsp.. Paprika Powder

3kilos of Meat

3tbsp. Fine Salt


6tbsp. White Sugar
1 ½ tsp. Curing Salt
¾ tsp cracked black pepper
¾ tsp. paprika

SOY HONEY GLAZE

½ c. yellow mustard
½ c. Brown Sugar
2 tbsps. Kikkoman Soysauce
½ c Honey
Pinch of all Spice or cinnamon Powder

Instructions

1. Combine the following curing ingredients in a bowl: Fine Salt, White Sugar, Curing Salt,
cracked black pepper and paprika and mix them all together. Rub it generously on to your
meat. You can stab your meats if you want the curing quicker.
2. Tie your meat with Butcher wine
3. Transfer it in a plastic container or ziplock and sealed.
4. Refrigerate your meat typically one day per inch(Thickness of meat), or at least 3-5 days
5. Put it in the refrigerator not in the freezer. Just make sure that you visit it when you put it
on the refrigerator and flip it everyday.
6. After 4-5 days – Wash thoroughly the meat to remove the excess salt and seasoning. Pat
it dry your meat after washing to remove excess water.
7. Bake it in a prehated 3000F oven for 1 ½ hour or until the internal temperature reaches
500C.
8. After 1 ½ hour put the glaze and bake it again.
CHRISTMAS MEAT LOAF

INGREDIENTS:

1/2kg. Ground Beef


1/2 kg. Ground Pork
1 1/2 whole eggs
1/2 c onions, fine chopped
1 can mushrooms, coursely chopped
1 cup Fresh Milk
1 1/2 c Fresh Bread crumbs
1/2 tbsp. Salt
1/2 tbsp. Garlic powder
1/2 tsp. Dried thyme
1 tsp. Black pepper ground
1/4 tsp. Curry Powder
1 tbsp. Brown Sugar
1/8 c. oyster sauce

For the Sauce

1/2 c Tomato/Banna Catsup


1/8 c.Yellow mustard
1/8 c. Brown Sugar
1/2 tsp. Paprika
