GRILLED BEEF

INGREDIENTS:

1/2 kilo beef (sliced 4x4 to 3/4 inch)

Calamansi

Pepper

Garlic (chopped)

Onion (chopped)

Seasoning (magic sarap)

Soy Sauce

PROCEDURE:

Choose your cut, pat it dry, and trim fat if needed

Rub with olive oil, salt, and pepper (add herbs/marinade if desired).

Get it hot (450–500°F / 230–260°C), clean and oil grates.

Cook beef 4–5 min per side for medium-rare (adjust for thickness).

Let it sit 5–10 min before slicing to keep it juicy


CHICKEN CORDON BLEAU

INGREDIENTS:

1 kilo deboned chicken

Garlic, Onion

1 tsp. salt, 1 tsp. pepper

1 tsp. MSG, Sugar (muscovado)

Cheese, Sweet ham

4 boiled eggs, Hotdog

Bread crumbs, flour

cooking oil, aluminum foil

Procedure:

Slice chicken into thin parts. Marinate with salt, pepper, sugar, and msg. and set aside.

Lay sliced chicken in foil, top with sweet ham, cheese, hotdog and boiled egg. Roll tightly in foil.

Steam for about 30 minutes. Remove from steamer and let cool.

Remove from foil then coat with flour, dip in beaten eggs and dredge with breadcrumbs.

Deep fry until golden brown.

Slice and serve.


GRILLED HAM AND CHEESE SANDWICH

INGREDIENTS:

2 pc. White bread grilled

1 pc. Ham grilled (sweet ham)

Prepared mayonnaise

Cheese

Procedure:

1. Spread the bread with prepared mayonnaise, top with ham, cheese and bread as its closing.

2. Cut into halves.

Mayonnaise

Ingredients:

½ tsp mustard

½ cup oil

1 egg

Calamansi juice

1 tsp sugar

Procedure:

In a bowl, beat the egg yolk until the color turns light yellow. Add mustard and beat well. Gradually and
oil. Add calamansi juice. Beat well until smooth and glossy. Add sugar beat until dissolved.

Note: To check the result of your mayonnaise, sponefull turn upside down, if it hold in air it is have a
good result.
LASAGNA

INGREDIENTS:

1 pound bulk Italian sausage(spaghetti sauce)

1 clove garlic(minced)

1 can (14.5 ounces) tomatoes

1½ teaspoons salt

2 cans tomato paste (6 ounces each)

10 ounces lasagna noodles (10 to 12 lasagna noodles)

3 cups ricotta cheese

¼ cup grated parmesan cheese

2 tablespoons dried parsley flakes

2 eggs

1 teaspoons salt

½ teaspoons pepper

16 ounces mozzarella cheese. shredded or thinly sliced(eden)

PROCEDURE:

Brown sausage slowly; drain off excess fat. Add garlic, tomatoes, 1 ½ teaspoons salt, and tomato paste.
Simmer, uncovered, for 30 minutes, adding a little water if too thick. Cook lasagna noodles in boiling
salted water according to package directions. In a bowl, combine ricotta cheese, parmesan cheese,
parsley, eggs 1 teaspoon salt, and pepper. Place a layer of noodles in bottom of a 13x9x2-inch baking
dish or lasagna pan. Cover with a layer of mozzarella cheese then spoon % of ricotta mixture over
mozzarella. Spoon ½ meat sauce over cheese. Repeat layers. Bake for 30 to 40 minutes in a 375 oven.
Allow lasagna recipe to set a few minutes before serving.
PASTA CARBONARA WITH WHITE CREAMY SAUCE

White creamy sauce/Béchamel sauce

Ingredients:

1 tsp flour, 1/3 cup milk, all purpose cream

1 tsp. butter, ¼ cup white stock

Procedure:

In a sauce pan, melt butter, add flour and milk. Mix well. Add cream. Mix until smooth.

Ingredients:

Knorr, 1 cup cold water, Carrot skin

Procedure:

salt and pepper to taste

In a pot or sauce poy, combine all ingredients. Simmer for 30 mins. Drain discard the bones and
vegetables skin.

Pasta carbonara/spaghetti carbonara

Ingredients:

12-15 strands spaghetti pasta, cooked according to package directions

1 cooked ham, Grated cheese

Parsley, chopped, Béchamel/white creamy sauce

Procedure:

Cooked the pasta, the arrange in a plate. Top with béchamel sauce/white creamy sauce, ham grated
cheese. Garnish with parsley.
MANGGOCORN PUDDING

INGREDIENTS:

Whole corn

Condensed milk

Evaporated milk

All purpose cream

Manggo condensed milk

Cream corn

Gulaman

PROCEDURE:

Mix milk, cream, mango condensed milk, and corn

Add jelly powder mixture

Pour into cups and chill.

Mix cream and condensed milk

Add vanilla extract

Top pudding with vanilla sauce and corn
