Feat: Finalize v0.2.0 release

This release includes:
- Transition to src/ project layout and updated tox testing.
- Removal of manifest.in and other chore cleanups.
- Code reformatting and uv dev dependency fixes.
- Fixes for deprecated functions in Demo.ipynb.
- Creation and refinement of the pypi-publish.yml GitHub Action using uv.
