To fix mamba not being able to solve the environment defined in
requirements.ymlwhen run asmamba env create --file requirements.yml, Python was explicitly added to the environment specification as recommended in the Mamba issue, with the version used being the most recent known good version (pinning to 3.12 gets us some sort of Snakemake compatibility issue).
