I made some minor language changes to the pattern but this looks good to me!
We already call out the controlled vocabulary in the DO item, so we don't need to repeat it from the DON'T perspective. Add "legal sex" to the DO item to cover both cases. Add hint text to explain how `X` is used.

Summary
This pull request expands and improves on our Gender Identity and Sex patterns. We've made updates to our pattern guidance and our pattern previews to help provide more practical use cases and up-to-date guidance for these patterns.
Details
We've included information about and references to the "Recommendations on the best practices for the collection of sexual orientation and gender identity data on federal statistical surveys" (PDF; 440 KB) that the White House released in January 2023.
We've updated the guidance to focus on the most common use case for collecting sex data: matching documents for identity proofing. This also includes updates to the following items:

Problem statement
We have an opportunity to update this pattern with the newest guidance from the White House and SME feedback. We need to keep improving these sensitive and evolving patterns to be as practical, accurate, and respectful as possible: to update the pattern guidance and preview to better cover document matching, give more comprehensive context around how other government projects are approaching these patterns, discuss how birth certificate sex data can vary from state to state, and to be sure we cover trust and safety for individuals entering gender identity and sex data.
