This is so we can use `inputs()` and `outputs()` simultaneously.
Keeps things cleaner
Trying to refactor all the config stuff to work with future ESI support.

An experiment adding the ability to manually configure certain SubDevices using a config struct. Right now I'm scoping this to just being able to enable oversampling but hopefully in the future this functionality can expand to take input from ESI files so one doesn't have to hand write a big pile of structs.
There's also some DS402 work in this PR but I'll remove that for a different PR before merge.
