If properties are not set, default behavior remains unchanged.

Example:

grails:
  plugin:
    fields:
      exclusions:
        display:
          - version
          - created
        input:
          - version
          - lastUpdated

This looks like it would work, but I'd like to see some tests for the exclusion loads.
