This will get a bug fix we need for the tests. And in general, I think it will make debugging easier as, by default, you will be testing against the latest code on the stable branch. When that code changes, you will immediataely get it in the tests
stable effectively means "allow composer to choose", which will choose Symfony 4.4

This avoids a behavior change in symfony/console@6f533d9...d2c9f77 from symfony/symfony#37286
I'll create a PR to revert this after merge, which we will merge once the issue is resolved.
