This is the solution mentioned by @noma at #231 (comment). I tested it and it is working as intended. Now the downstream user can avoid having to add
target_compile_definitions(${PROJECT_NAME} PUBLIC TINYOBJLOADER_USE_DOUBLE)in their downstream CMakeLists.
