Roll With It is a monthly newsletter by me, Cissy Difford. I am a pastry chef / baker, food writer and recipe developer, based in London.

Roll With It was born out of a love for experimenting with ingredients, a hunger to learn more and a desire to go with the flow.

Outside of my life working in a professional bakery, this newsletter is a way for me to share some of the things I’ve learnt over the past 7 years working in the industry. The aim is to help you feel more confident in the kitchen and share recipes that bring me joy.

For me, the key to baking (and the way I work) is knowing that you’re not always going to get it right the first time. Mistakes are normal and they ultimately help you become more knowledgeable. As long as you’re having fun and it tastes delicious, who cares!
