Case Study: Suspected Food Poisoning at a Charismatic Celebration in Cebu City
Food Hazard Identification:
The food hazard in this case study is suspected food poisoning (Chemical Hazard) that
occurred during a Pentecost charismatic celebration in Cebu City. Individuals fell ill after
consuming "humba," a Cebuano pork dish, which was part of the packed lunch served during the
event.
Possible Scenario:
It's possible that wrong ingredients or dirty ones were used while making the "humba"
dish for the event. As a result, many people who attended, including performers and guests, ate
this dish. Soon after eating it, 37 people got sick with food poisoning symptoms like feeling
nauseous, throwing up, and having diarrhea. They were so worried that they had to go to two
private hospitals in Cebu City for medical help. The Department of Health (DOH) in Central
Visayas started looking into what happened and took samples of the food to examine.
Opinion:
The suspected food poisoning incident highlights the importance of food safety measures
during large gatherings and events. While it is crucial to celebrate cultural and religious
occasions, ensuring the safety of the food served is equally important. Foodborne illnesses can
have serious consequences and can easily spread in such settings.
Solution to the Issue:
Thorough Food Safety Training: Organizers of events should ensure that caterers and
food handlers receive adequate training in food safety and hygiene practices.
Food Inspection: Implement strict food inspection protocols for caterers and vendors to
verify the quality and safety of the food they provide.
Prompt Response: In the event of foodborne illness symptoms, event organizers should
have a protocol in place for quick medical assistance and transportation to healthcare facilities.
Food Labeling: Clearly label food items and include allergen information to ensure
attendees are aware of what they are consuming.
