quarkus-next: compilation error after the deprecated API removal from SmallRye #28125

Description
The SmallRye team removed a deprecated API (in the version 3.6.0), from which we still override the iterateValues() method within PropertyMappingInterceptor class.
It's the reason why quarkus-next workflow is currently failing.
