DCA Reflection

Pancake Sheet DCA Reflection

1. What were your initial thoughts about preparing this meal? Please
respond with a minimum of one sentence. I was excited to prepare
this meal because I had never tried a pancake that was cooked in
the oven. I was also curious to see what toppings would go with it
and if we would eat it with butter and syrup.
2. Please tell me what utensils or equipment that you used in this
lab? Was there some utensils and equipment that you used in the
lab that you had never used before? Please respond with a
minimum of two sentences. In this lab, we used a large bowl to
mix everything, a whisk to stir, a rubber scraper to get it all off of
the bowl, and finally a knife to cut the product. I have used all
these before.
3. What equipment do you think would have helped you prepare food
easier in this lab? Please respond with a minimum of one
sentence. Since this was already a fairly simple lab, I believe that
the best preparation was just getting the ingredients like everyone
else. However, we had some of the ingredients already mixed
which helped.
4. What ingredients were used in your food preparation? Please
respond with a minimum of two sentences. The ingredients
included: flour, brown sugar, granulated sugar, baking powder,
kosher salt, an egg, milk, unsalted butter, and vanilla extract. We
decided no to use toppings, but we ate it with syrup.
5. Describe what you cooked. Include descriptive words for texture,
color, temperature, shape, and nutritional value. Your description
should be a minimum of five sentences. We prepared sheet
pancakes. They were light brown, very warm, and in the shape of
a rectangle because it took up the shape of the sheet pan. They
had a similar texture to a muffin, but just a little fluffier. Lastly, they
were not very thick. The nutritional values are: about 400 calories,
60g of carbohydrates, 10g of protein, 31g of fat, saturated fat,
trans fat, polyunsaturated fat, and monounsaturated fat combined,
and 97g cholesterol, 160mg sodium, 374mg of potassium, 2g of
fibor, 30g of sugar, 520 IU of vitamin A, 5g of vitamin C, 187mg of
calcium, and 3g of iron.

6. If you could redo this lab, what would you like to change or
improve in the texture, color, temperature, shape, and/or nutritional
value? What would you like the opportunity to do to this lab to
make it better? Why? Please respond with a minimum of two
sentences. I would like to make a few minor changes. First I would
use gluten free flour to improve the nutritional value. I would also
like to try incorporating toppings such as fruit or chocolate chips.
7. What safety measures did you take in your food lab to ensure that
you and your classmates were kept safe? What are things that
you would like to suggest to make the lab safer in the future?
Please respond with a minimum of two sentences. I don’t believe
there was too much danger in this lab other than the. However, I
did make sure that my group member had an oven mitt and that it
wasn’t torn. I don’t believe there is anything else to make the lab
safer for next time.
8. What difficulties did you have in preparing for this lab? Please
respond with a minimum of one sentence. The only difficulty was
that we had a hard time finding the correct sheet pan to use that
was the right size.
9. Did you learn about anything new while discussing this lab with
your instructor or your classmates? If you did, what did you learn
in this lab that you will apply in your home or in other foods labs?
Please respond with a minimum of one sentence. I had already
known most of the skills we used, however, it was a little hard to
know the measurement to use when halving the milk. It was good
practice after we figured it out though,
10. What prior experiences did you have that helped you prepare this
meal? Did you do something differently than you normally would
have at home? If so, what did you do? Why? Please respond with
a minimum of one sentence. My prior experiences helped me
when I was able to correctly judge if the sheet pancake was ready
by looking at the toothpick we stuck in it. I knew It was normal for it
to look greasy, it just shouldn’t have any raw batter on it. I did not
try anything that I haven’t already done at home.

11. Is this a lab that you would like to take home and prepare again for
your parents? Why or Why not? Please respond with a minimum
of two sentences. Yes, I would prepare this for my family. I would
like to prepare it because it is an easy way to make bigger
servings rather than making a ton of pancakes. This would be
helpful if I wanted to make breakfast for my family.
12. Briefly explain what your duties were in this lab. Please respond
with a minimum of two sentences. As assistant cook, my job
included: getting the supplies, greasing the pan, helping the cook
prepare the product, drying dishes, and making sure everything is
up. I checked the sheet pancake as it was cooking in the oven
using the oven light, I also helped out in the other areas of the
kitchen if my group needed my help
13. Please comment on group participation. Was there anyone in your
group who did not do their fair share of the lab? If so, who?
Explain why you feel that this person did not do their fair share.
Please respond with a minimum of one sentence. Everyone in my
group participated the same and very well. We all did the jobs that
we assigned to ourselves and worked efficiently. In doing so, we
finished the lab pretty quickly.
