equipment’s necessary for the assessment,

Good morning, I would like to welcome you all in Binmaley School of

Fisheries, My Name is _____________, I am an accredited competency
assessor for Bread & Pastry NCII.

I would like to acknowledge also with me of MR. Marlon Cerezo, our

processing officer, the AC Manager Dr. Rosa P. Untalan and to Mam Liberty
Luzadas our representative from TESDA Provincial Office.

You don’t have to worry about their presence. They are here to oversee the
conduct of competency assessment and to check if the conduct is in the
accordance with the prescribed competency assessment methodology and
procedures. They will not asses you.

Once I call your name, signed here for your attendance and present to me
your admission slips.

*NOTE: upon signing of attendance sheet the assessor must validate the
authenticity of the candidate by comparing the signature from the
admission slips.

I have here with me your accomplished self-assessment guide, this is an

indication that you know and can perform all of the units of competency
enumerated in Bread and Pastry NC II.

II. Orientation
A. context and purpose of assessment

I would like to welcome you to the assessment center for Bread and Pastry
NCII.
The purpose of assessment in Bread and Pastry is to determine the level of
your competency

Today I’m going to administer the competency assessment for Bread and
Pastry NCII and the qualification level is composed of Basic, Common and
Core Competencies.

For our core competencies we do have.

1. Prepare and produce bakery products

2. Prepare and produce pastry products
3. Prepare and present gateaux, tortes and cakes
4. Prepare and display petites fours
5. Present desserts

B. Task to be performed and evidences to be collected evidences

The task to be performed for the Bread and pastry are the following.

1. Prepare and produce pandesal

2. Prepare and produce cookies
3. Present desserts

C. Assessment Procedure to be undertaken.

To determined your knowledge and skills the assessment method we will

use is, demonstration and oral questioning. This assessment methods can
help to measure your knowledge and skills.

D. Needs of the Candidates

To your personal needs our comfort room is located at the end of the
hallway and if you want to take your meal our canteen is located at the
lobby. However, during the assessment you are not allowed to leave the
assessment area.

E. Allowable or Reasonable

If you have difficulty in understanding in giving the instruction do not

hesitate to inform me because I am willing to translate it for you.

F. Do’s and don’ts

If you have any concern, question or to clarify the matters regarding the
assessment, you may raise your hand. I’m more willing to assist you, but
once the assessment has started, please refrain for asking question
because is no longer allowed. In the same note during the assessment if
you have a physical or any form of difficulties. Do not hesitate to call my
attention so we can address it immediately.

G. Rights and Appeal System

 In case you have a question regarding the assessment results you have
the right to appeal, you can submit your appeal to the assessment center
manager.

H. Issuance of the national certificate

For issuance of national certificate, the AC manager will inform you

where you can claim the National certificate in five working days after
the Assessment.

I. Re Assessment Procedure

After the assessment and you found out that you’re not competent.
Don’t hesitate for you to re-assess anytime at your own convenience. In case
the re assessment is in full qualification you will undergo into the whole
assessment process, if you found that you are competent in some
competencies, the re assessment will focus where you were found that not
yet competent.

Also, if you failed to take the two consecutive assessments, you will advise
to undergo a refresher course before applying the assessment.

J. Occupational safety and health requirements.

During the actual assessment please observe the safety issue in

performing the different task make sure to check the electrical equipment
before plugging it. While you pull the cord as you unplugging it. Observe
proper body mechanics in lifting heavy equipment to avoid back injury in
case of accident please call my attention immediately so that we can
provide a first aid. And if should need arise our first aid cabinet is located at
the laundry workshop.

K. Confidentiality of assessment outcome

With regards to the results of your assessment we observe strict

confidentiality this is to ensure your integrity the results may available to
the authorize personnel and the institution where you had your actual
training. In relation to this the assessment package is keep in secured place
to guarantee the integrity of the assessment package. May i ask the
candidate to reframe in giving a way any form of information that took place
during the assessment process.

III. Provide each candidate a copy of the specific instructions to the

candidate

If you don’t have any question or clarification, then I’m going to distribute
the specific instruction. Please read it carefully don’t hesitate to ask
question right now. If you want me to translate it in your local dialect, then
I’m very willing to assist you.

So, this are the specific instruction:

1. using the materials tools and equipment you are required to perform
the task within 4 hours and I will observe you while you performing
the task.
2. After your demonstration, I will ask you some question related about
it.
3. You may call me when there Is a need for me to translate or explain
items for clarification
4. After the questioning portion I will give you feedback about your
performance
5. Any questions /clarification? If there no more questions you may start
now.

IV. DEMO:
CANDIDATES we may now proceed to your assessment area.

Here in the assessment area you will perform in preparing graham

balls, the tools and equipment you needed for your demonstrations are
available and this area is cover with cctv camera supervised from tesda
regional office.

Please read again the specific instructions for this assessment, do you
have a question? Because once you started you can’t ask any questions
anymore. If none, then you may begin your demonstration.

NOTE: After the demonstration, assist them to wait in the holding area for
the oral questioning.

V. ORAL QUESTIONING:
1. Candidate number 1 here is your question, identify the materials
needed in presenting desserts?
2. Candidate number 2. Your question is, how do you maintain safeties in
presenting your desserts?

Provide feedback.

1. Competent- how do you feel the assessment?

Based on your demonstration, I have witnessed that you are too tense
in preparing your dessert, why?
But eventually you have presented your output very well and your
area is neat and tidy plus you answered well in oral questioning and
that is the proof that you are knowledgeable enough and have skills in
Bread and Pastry NCII and for that YOU ARE COMPETENT!
Please sign here in the competency result summary. For the issuance
of the national certificate the AC manager shall inform you where to
claim your national certificate for 5 working days. Congratulations.!
 2. Not Yet Competent- how do you feel the assessment?

Thank you for your effort in trying to finish your demonstration, but
sad to say that during your demonstration that I need to stop you because
you have sliced your finger unintentionally. However, during your oral
questioning you’ve shown me that you are determined to finish the
assessment process. Then again, because of the standard qualifications,
YOU ARE NOT YET COMPETENT. Don't be discouraged! Every challenge is
an opportunity to grow. With more practice and confidence, I am certain
you will excel. Keep moving forward, and I believe you will master the
necessary competencies in no time.

However, you can re-assess anytime at your convenience. If you have

doubts regarding the assessment results you have the right to appeal and
submit your appeal to the assessment center were the assessor and the
assessment center are accredited. Please, sign the competency summary
results. Do you have any question?

VI. Task to be done after the assessment.

Note: assessor will

1. record the assessment outcome

2. ensure that the rating sheet was sign by the candidate after providing
feedback.
3. Accomplished the competency result summary

Submit to AC manager the assessment report and the AC manger will give
the documents to the processing officer to accomplished the registry of
workers assessed and certified.
