I already checked the facilities, the tools & equipment’s necessary for the
assessment.

I just received from the AC Manager the Application form, Self-assessment guide
and the Attendance sheet.

I received the Competency Assessment package from the TESDA Representative

and it’s all complete. Now I am ready… Candidates you may now come in… Ok

L.O 2 PREPARING THE CANDIDATE

Introduction
Good day candidates, Welcome to our Tesda assessment center for the conduct of
our competency assessment. How are you today? Fine… So, you are here today to
take the National Assessment for FBS NCII right? Ok let me introduce myself, my
name is Joan R. Usman, I will be your competency Assessor for Food and Beverage
Services NCII. Here is my identification card as proof of my accreditation.

Before we start, let us acknowledge the presence of Mr. Reginaldo Reyes, our AC
manager and Mr. Mark Louie Pascua, our TESDA Representative, good day Sir
Reyes and Sir Pascua. Candidates, you don't need to worry about their presence
they will not assess you, they are here to oversee the conduct of the assessment
and to check if the conduct of the assessment is in line with the prescribed
competency assessment methodology and procedure.

Alright so I have here with me the accomplished Application form and Self-
assessment guide, this is an indication that you know and can perform all of the unit
of competency required on this qualification.
Enumerate qualification

Ok so for today… I am going to administer the competency assessment for Food

and Beverage Services NCII. This qualification is composed of basic, common and
core competencies. For our Core competencies we have:

1st Prepare the dining room/restaurant area for service

2nd Welcome guests and take food and beverage orders
3rd Promote food and beverage products
4th Provide food and beverage services to guests
5th Provide room service and
6th Receive and handle guests concerns

Required to perform
Food and beverages services NCII has full qualification where you are
required to perform the following tasks:

Table Reservation 5mins

10 table napkins folding for 5 mins
welcoming the guest 5 mins
table service 25 mins
wine service 5 mins
for room service 15 mins

Assessment method
To determine your knowledge and skills for food and beverages NCII, the
assessment method will be use are written test and demonstration and oral
questioning. This assessment method can help to measure your underpinning
knowledge and skills for FBS NCII

Purpose
I have a question; do you have any idea what is the purpose of the assessment?
Yes, for certificate. Yes, for applying job, promotion, requirements for abroad. Ok,
Some of you have an idea…

In TESDA it is to ensure that you have met the standards required or let’s say your
competencies match for FBS NCII.

Role
What is my role as an assessor… Of course, I mentioned earlier that the knowledge
and skills you have should be certified, that will be my role, I will be the one to
observe, gather and record evidence and make a judgement whether the
competency have been achieved.
Now let's proceed to the setup and the context of this assessment. This is
our orientation area as well as waiting area; after our orientation, I will also conduct
our written test here. When you leave this door, at the right side will be our
demonstration area and interview area which means after your demonstration I will
interview you on the same area. Our written test will take 30 minutes, our
demonstration will last 15 minutes, and in oral questioning I will ask you 5 questions
and you need to get 4 correct answers to be satisfactory

Candidate will go first. We have already assigned who will be your guests. At the
end of the corridor nanduon po ang rest room, so any body who wants to go to the
restroom, paglabas nito pinto kaliwa lang po kayo nanduon po sa dulo. if you want
to take your meal you can take your meal at our canteen which is located at our
lobby. However, once the assessment started you can no longer leave in the
assessment center. The restroom is located at the end of the hallway, therefore
anyone who has to use the restroom just go to the left. If you want to eat, you may
do so in our canteen, which is located in our lobby. However, once the assessment
has started, you are not allowed to leave the assessment center.

If you have difficulties understanding the given instructions please raise your hand
so that I can translate it for you and during the written examination if you have
dilemmas writing down your answer, please don't be shy because we can accept
your answer verbally. okay so if you have questions or clarifications regarding with
assessment please raise your hand so that I can help you, however Once the
assessment started, please refrain from asking questions because it is no
longer allowed, same with your cell phones you are not allowed to use it
during the assessment, just kindly put it on silent mode or perhaps turn it
off. Food is also not allowed here in the assessment area; eating is strictly
prohibited. so, any other concerns

Are there any pregnant, Muslim, or senior citizens here? I see we have a pregnant
woman. How many months? Really, you still look sexy… We have a senior, really?
Yes Sir… I don't think you are a senior because you still look strong and young.

Confidentiality
Going back to our orientation, in terms of the result of your assessment, we maintain
strict confidentiality in order to protect your integrity. The result is only available to
the right personnel and to the institution where you had your actual training. Lastly
may I remind everyone that please refrain giving any information outside regarding
the process of the assessment. In relation to this, the assessment package is kept in
a secure place to ensure the assessment package integrity.
Results of Assessment
We only have 2 results: Competent or Not Yet Competent…
If you have found competent, magkakaroon po kayo ng National Certificate which is
valid for 5 years. After the assessment we will give you the CARS and you will bring
it sa TESDA District office. Pay 50pesos then wait for 3 – 5 working days para sa
National Certificate niyo po.
If you found to be not competent, you don't need to worry because you can be
reassessed anytime at your convenience.

In case of full qualification, then you need to take the whole assessment process

However, if you have found competent in some areas of the qualification, you have
to be reassessed to the areas of competencies you have found to be NOT YET
COMPETENT.

If you failed two consecutive assessments, you will be advised to get a refresher
course before you can take the reassessment

Appeal Process

Now we have here what we call right to appeal, that means if you’re not
happy about the result of the assessment you have a right to appeal through
writing addressed to the AC Manager, immediately after the assessment.

PPE and OHS

next we have your ppe or personal protective equipment. so these are

the things that you must have during your demonstration to optimize
protection from workplace hazard.

We also have do’s and don’ts here to be follow.

For the do’s you are going to wear PPE and follow OHS procedure when conducting
the demonstration.

For don’ts using cellphones are not allowed, loitering in the premises, and leaving
the premises of AC without informing the assessor or staff.

We will now start in your written exam this is 30 item multiple choice test
and I will just give you 30
minutes to answer it. Here are the questionnaires, please get one and

LO3 GATHER THE EVIDENCE

Demonstration

Candidate #1, this is our demonstration area, here is the station 2 where you can
perform welcome guests and take food and beverage orders. So, miss Glenna will
be the guests and you will be the Food and beverage server.

Please be informed that after the demonstration there will be an oral questioning. Do
you have any question? Are you ready? You may now start.

Ok so you are now done doing the task. Please follow me in the interview area.

Ok the assessment is done. I already gather the evidence … allow me for a few
minutes. I will just corroborate all the evidence…

Candidate #1 How are you, oh it seems that you are happy… Are you happy with
your work? Good… so first how are you going to rate yourself from 1 to 10, and 10
is the highest. Okay 8, its good … So, it seems that you are confident with your
work. Are you ready for my feedback?
Candidate#1

I checked your written test, and I was able to gather evidence of your knowledge.
Although, the question18 on table napkin, you answered letter B which________ but
the answer to that question is letter A which is ________. I appreciate that you
submit a neat and no erasures in the paper.

Next your demonstration, I heard you welcomed the guest in the restaurant and
introduced yourself. You checked the reservations and motioned the guest to follow
you to her table. You directed the guest to sit. You present the orders properly and
you perform suggestive selling.

Now, I have observed that you didn’t assist the female guest by moving the chair.
Remember, you are supposed to go to the back of the chair to assist the female until
she was comfortable on the chair at the table. When you handed the menu, try to
introduce the menu to the guest.

I like that you have maintained your smile that can make any guest feel welcome.
You were polite to the guest all throughout the demonstration. These are some good
characteristics of any waiter.

During oral questioning, you were very confident in answering question. It’s a sign
that are truly prepared for the assessment.

Are you ready for the result of your assessment? Both demonstration with oral
questioning and written test got a satisfactory result, thus I find you competent for
FBS NCII. Are you happy with that? Ok good so Congratulations!

Please get the CARS from the AC Manager later. Bring the CARS to TESDA
Pamamarisan District Office and pay P50. The certificate will be released within 3-5
days.
